Bone Suckin' Chicken Salad
Bone Suckin' Poultry Seasoning, 1 Tbsp.
Chicken Breast, 4
Tarragon, 1 Tbsp.
Granny Smith Apple, 1 diced
Pecan Pieces or Almond Slices, 1/2 cup lightly toasted
Celery, 1 cup, finely diced
Pineapple Juice, 1/2 cup
Mayonnaise, 1 cup
Sea Salt and Pepper to taste
Slow cook the chicken breast in a crock pot with water just covering chicken breast. Add Bone Suckin' Poultry Rub to the water in the crock pot. (This step can be done the night before.)
When chicken is done, shred or cut up chicken and place in a large mixing bowl. Pour pineapple juice over the chicken and set aside while cutting up apples and celery. Add tarragon, apples, celery and nuts to chicken and mix well. Add mayonnaise to chicken salad and salt and pepper to taste. Serves 4-6.
